INGREDIENTS

  • 1 / egg yolk, at room temperature
  • 1 tablespoon / freshly squeezed lemon juice
  • 1 tablespoon / water
  • 1 teaspoon / Dijon mustard
  • 1 tablespoon / double concentrated tomato paste
  • ¾-1 cup / Zucchi Organic Extra Virgin Olive Oil
  • 1 tablespoon / dried Italian herbs
  • 1 teaspoon / minced garlic
  • to taste / Kosher salt

INSTRUCTIONS

  1. Place egg yolk, lemon juice, water, mustard, and tomato paste, in a narrow, tall container. (Make sure you use a cup or jar that is just slightly larger than the head of the immersion blender so that the egg and lemon mixture is able to touch the blades of the blender.)
  2. Blend for 20 seconds, until the color is consistent.
  3. While blending, slowly pour in the Organic olive oil, ¼ cup at a time, until the mixture is thick and voluminous.
  4. Add in Italian herbs and minced garlic. Mix together with a spoon. Season, to taste, with salt.
  5. Store olive oil mayo in a glass jar in the refrigerator for up to 1 week. Enjoy tomato herb olive oil mayo on sandwiches, burgers, or with roasted potatoes.
