  • 1 pounce / Maccheroni al Ferretto pasta (bucatini works too)
  • 1 ¾ cups / sheep's milk ricotta cheese
  • 4 tablespoons / Zucchi Organic Extra Virgin Olive Oil
  • to taste / black pepper
  • to taste / salt
  • to taste / Pecorino Romano cheese, grated


Bring a large pot of water to boil. Cook the pasta according to the package. In the meantime prepare the sauce.

Put the ricotta cheese, Zucchi Organic Extra Virgin Olive Oil, plenty of black pepper, and 2-3 tablespoons of cooking water from the pasta into a large bowl. It is important to use a sweet, mild extra virgin olive oil otherwise its flavor will mask that of the ricotta cheese. Mix well with a fork until creamy. Add more cooking water if necessary; add salt to taste.

When the pasta is cooked, drain it and add it to the bowl; mix well. Serve immediately with more black pepper and grated pecorino cheese, if desired.
