INGREDIENTS

For the onion jam:

  • 2 / yellow onions, thinly sliced
  • 2 tablespoons / unsalted butter
  • 2 tablespoons / good-quality balsamic vinegar
  • to taste / salt and black pepper

For the whipped truffle goat cheese:

  • 5 ounces / goat cheese, at room temperature
  • 2 tablespoons / whole milk
  • 1 teaspoon / Zucchi Truffle-Flavored EVOO
  • 1 / garlic clove, minced
  • to taste / salt and black pepper

For assembling the burgers:

  • 1 pound / high-quality ground beef, 80/20
  • 4 / brioche buns
  • 2-3 tablespoons / unsalted butter, for toasting the buns
  • 1 cup / arugula
  • to taste / salt

INSTRUCTIONS

  1. Prepare the onion jam. In a large skillet, melt the butter over medium heat. Once butter starts to foam, add the onion. Cook over medium-high heat stirring only occasionally; cook until golden, about 10-15 minutes. Add balsamic vinegar and cook until thickened. Remove from heat and season with salt and pepper, to taste.
  2. Prepare the whipped truffle goat cheese. In a medium-sized bowl, combine the goat cheese, milk, truffle EVOO, and minced garlic. Using a hand mixer, whip on medium until light and fluffy. Set aside.
  3. Make the burgers. Season ground beef with salt. Shape the ground beef into four equally-sized patties, a little bit wider than the size of the buns. Make a well in the middle of the burger with your thumb to help it keep its shape while cooking. Sprinkle the surface of both sides with a generous amount of salt. In a large cast-iron or non-stick skillet, cook the burgers, about 4 minutes on each side. Set aside and let rest at least 5 minutes.
  4. Toast the buns. Wipe out the skillet that you cooked the burgers in. Heat 2 tablespoons of butter until foamy. Add the buns, flat side down, toasting until golden.
  5. Assemble. Spread the whipped truffle goat cheese on the bottom half of the bun. Top with cooked burger patty, followed by onion jam and arugula. Drizzle with a small amount of truffle oil as desired. Finish with the top half of the burger bun and serve immediately.
