Fig, Truffle and Goat Cheese Pizza

INGREDIENTS

  • 1 ball / pizza dough
  • 1 tablespoon / Zucchi Organic Extra Virgin Olive Oil
  • 2-3 / large figs (or 8-10 small figs)
  • ¾ cup / soft goat cheese
  • 1 teaspoon / fresh thyme leaves
  • 2 teaspoons / Zucchi Truffle-Flavored Extra Virgin Olive Oil, plus more for serving
  • / Arugula, chili flakes, grated parmesan, extra Zucchi truffle oil for serving (optional)

INSTRUCTIONS

Take the pizza dough out of the fridge about an hour before baking to let it come up to room temperature.

Preheat the oven to 450℉.  Cover a round pizza stone or pan with parchment paper.

Stretch the pizza dough to the size of the pan and arrange on the pizza pan. Brush the dough with Zucchi Organic Extra Virgin Olive Oil.

In a small bowl, mix the goat cheese, fresh thyme leaves, and Zucchi Truffle-Flavored Extra Virgin Olive Oil until well-combined. Arrange the dollops of truffled goat cheese over the pizza dough, making sure they are evenly distributed.

If you are using large figs, then slice them into ¼-inch pieces. If you are using smaller figs, then quarter them. Place the figs over the goat cheese.

Bake the pizza for about 15-20 minutes until the dough is cooked through and golden brown around the edges. Optionally, broil for a couple of minutes to add a characteristic char to the edges of the pizza if desired.

Drizzle with extra Zucchi truffle oil before serving. If desired, add freshly grated parmesan cheese, chili flakes, and arugula for serving.
