Skillet-Roasted Grape Chicken

INGREDIENTS

  • 1/2 pound / organic red seedless grapes, washed
  • 4 / chicken thighs, skin on
  • 2 1/2 tablespoons / Zucchi's Garlic Extra Virgin Olive Oil
  • 1 sprig / fresh rosemary or thyme
  • 3 / shallots, sliced lengthwise
  • 1 tablespoon / balsamic vinegar
  • 1 teaspoon / kosher salt
  • to taste / black pepper

INSTRUCTIONS

Preheat oven to 400°F.

Heat Zucchi Garlic Flavored Extra Virgin Olive Oil in an oven-proof skillet over medium-high heat.

Season the skin side of the chicken generously with salt and pepper. Place the chicken thighs skin-side down in the hot skillet.

Turn down the heat to medium and sear on one side for 6-7 minutes, or until golden and crispy. As the first side is cooking, season the other side of the chicken with salt and pepper.

Flip the chicken and turn the heat down to low.

Nestle the shallots and grape clusters between the chicken and drizzle with balsamic vinegar.

Sprinkle with thyme and place the entire skillet in the oven for 20 minutes or until the chicken’s internal temp reaches 170°F.

Remove from the oven and let it rest for about 5 minutes before serving.
