With its mild intensity and notes of ripe fruit, our organic extra virgin olive oil is perfect for baking and light dishes like this one.

  • 2 slices / whole wheat or multi-grain bread, sliced
  • 5-8 / cherry tomatoes
  • 10 / sun-dried tomatoes
  • 7 ounces / Feta Cheese
  • 1 / ripe avocado
  • 4-5 / fresh basil leaves
  • to taste / salt and pepper

Toast the slices of bread lightly in the toaster. They must be crispy but still soft, don’t overdo it!

In the meantime, cut the avocado in half, remove the flesh from one half with a spoon and place it in a bowl. Add a little salt and pepper then mash the avocado with a fork.

Drain the sun-dried tomatoes and pat with a paper towel to remove the excess oil.

Spread the mashed avocado on each slice of toast. Top with a few sun-dried tomatoes in the center.

Dice half the feta and sprinkle it over the corners of the toast where there are no tomatoes. Garnish with a fresh basil leaf then drizzle Zucchi organic oil to add flavor.

For the second open toast sandwich: cut the remaining half of the avocado into small triangles and arrange them right across the slice of bread. Wash and halve the cherry tomatoes. Add salt and pepper and leave to stand for a while.

Then arrange them on the toast and crumble the remaining half of the feta cheese on top. Tear up the rest of the basil with your hands and sprinkle it over the bread, add salt and pepper, and complete with a drizzle of Zucchi organic oil.
